Blazing green and gold, fast and acrobatic, mahi-mahi are a green-season favorite and a family-charter dream — they jump, they run, and they are delicious. Costa Rica's rainy months push floating debris and current lines offshore, and dorado stack up beneath them in numbers.

Where & when

Around floating debris, logs, buoys and current edges offshore. Often caught on the same trips as sailfish and tuna.

How we fish it

Trolling small lures and ballyhoo, then casting to the school once one is hooked — dorado travel in groups. Kept for the galley.
